To get in the mood for our Cinco de Mayo party I though I would be just like my mom. As most of you know my mother and I are very close, so I figured I could make flan just as well as she can.
I donned my pink apron, had my ingredients ready to go. Then I waited and waited and waited for her to call. Around 10:00 last night, my kitchen adventure began.
She told me the recipe:
Sugar
Milk
Eggs
More Sugar
Vanilla
Salt
Melt the sugar in a skillet. Once its amber colored carefully pour it into your dish.
Simultaneously simmer the milk while beating the eggs with a mixer until they are frothy. Add more sugar, a hefty squeeze of vanilla and salt. Mom says baking isn't an exact science.
Here’s the tricky part…when the milk simmers, carefully pour it into the eggs, sugar and salt all while beating the eggs.
That was the point in the evening when my mixture went splattering across the kitchen – best of luck to you!
Pour the mixture into your dish. And place the entire dish into a baking pan.
Put in a 350 degree pre-heated oven. Then carefully pour hot water into the baking pan creating a bath for the flan to bake in.
Bake while cleaning the walls, pots and pans. Then insert a knife into the center of the flan. When it comes out clean, your flan is ready. (Baking and cooking time are approximately 45 minutes.)
Cool for about 30 minutes. Then refrigerate overnight.
Upon serving, cut around the edges of the dish, place your serving platter over the top and in one fell swoop – flip it!
Garnish with fruit as desired.
Enjoy!!
My adventure was over around 12:30 last night. It may not compare to moms –she’s a dessert catererafterall! I would share the exact proportions, but she would have to hurt me! If you like it enough, let me know when and if you need flan in the future and I’ll make it for you.
